Pharaohs treasure! Ancient Egyptians used it as a spice, as a remedy and for embalming. It is rich in vitamins A, B1, B2, B3, B5 and D as well as iron and phosphorus. Its characteristic scent is reminiscent of curry and when sprouted it can be used to add flavour to pasta and rice dishes. Germination time is 2-4 days with 6-8 hours soaking time. Sprouts develop bitter substances during germination. The longer the germination time, the stronger the bitterness. Seeds are best sprouted in a sprouting jar. Hard seeds are occasionally possible after germination. Dried Fenugreek seeds can be used as a seasoning for curries and other Indian dishes. Toast briefly in the pan first.
